Crispy Lamb Mince Potato Cakes
Made with fresh Grass Fed NZ Lamb Mince, mashed potato, onion, and egg, this recipe is a great option for busy weeknight dinners. The outside becomes golden and crisp, while the inside stays soft and filling. These crispy lamb mince potato cakes are simple, comforting, and easy to make with everyday ingredients.
Ingredients
Grass Fed NZ Lamb Mince 500g x 1 pack
3 large potatoes
1 onion, finely chopped
1 egg
Salt
Pepper
Oil for pan-frying
Optional: garlic, parsley, chilli flakes, and grated cheese
Method
Boil the potatoes until soft. Drain well, then mash and set aside to cool slightly.
Heat a pan with a little oil. Add the onion and cook until soft.
Add the lamb mince, season with salt and pepper, and cook until browned. Break the mince up as it cooks.
In a bowl, combine the mashed potato, cooked lamb mince, and egg. Mix until everything holds together.
Shape the mixture into small patties. If the mixture feels too soft, chill it in the fridge for 10–15 minutes before cooking.
Heat oil in a pan over medium heat. Pan-fry the potato cakes for a few minutes on each side until golden and crisp.
Serve warm with salad, yoghurt dip, tomato sauce, or gravy.
Tips
Use leftover mashed potato to make this even quicker.
Make smaller cakes for lunch boxes or easy snacks.
Coat the patties with bread crumb before frying if a crunchier texture is desired.
