How to Cook the Perfect T-Bone Steak

Whether you’re firing up the BBQ for a weekend dinner, cooking something special for Father’s Day, or simply craving a proper steak at home, you don’t need complicated ingredients or restaurant equipment to get a great result.
Here’s how to cook the perfect T-Bone steak at home.
What Makes T-Bone Steak Special?
The T-Bone gets its name from the distinctive T-shaped bone separating two different cuts of beef: sirloin and tenderloin.
That means you get two textures and flavours in the same steak. The sirloin delivers a rich, beefy flavour, while the tenderloin side is softer and more delicate.

Keep the Seasoning Simple
With a quality steak, you don’t need to cover up the flavour.
For a classic T-Bone, all you really need is:
- Angus Beef T-Bone Steak
- Salt
- Freshly ground black pepper
- A little oil
- Butter
- Garlic and fresh rosemary or thyme, if desired
Take the steak out of the fridge around 20–30 minutes before cooking. Pat it dry with a paper towel, lightly coat it with oil and season generously with salt and pepper.
Keeping the surface dry will also help you get that beautiful browned crust.
How to Cook T-Bone Steak on the BBQ
A hot BBQ is one of the easiest ways to cook a great T-Bone.
Preheat your BBQ until the grill is properly hot. Place the steak onto the grill and let it cook without moving it too much.
As a general guide for a thick T-Bone:
Medium-rare: approximately 4–5 minutes per side
Medium: approximately 5–6 minutes per side
Cooking times will vary depending on the thickness of the steak and the heat of your BBQ, so a meat thermometer is the easiest way to get the result you want.
For medium-rare, aim for an internal temperature of around 54–57°C before resting.
If your T-Bone is particularly thick, you can also sear it over high heat first, then move it to a cooler part of the BBQ to finish cooking more gently.
Cooking T-Bone in a Pan
No BBQ? No problem.
Heat a heavy frying pan or cast-iron skillet until very hot. Add a small amount of oil and place the seasoned steak into the pan.
Sear both sides until nicely browned.
During the final couple of minutes, add a knob of butter, crushed garlic and a sprig of rosemary or thyme. As the butter melts, spoon it repeatedly over the steak.
It’s a simple step, but it adds plenty of flavour.
Don’t Skip the Resting Time
Once the steak is cooked, resist the temptation to slice it immediately.
Transfer it to a plate or board and let it rest for approximately 5–10 minutes.
Resting allows the juices inside the meat to redistribute, helping your steak stay juicy when you cut into it.
When it’s ready, slice the meat away from the bone and cut it across the grain — or simply serve the whole steak and let Dad tackle it himself.

You can make the meal as simple or as impressive as you like.
For a classic steak dinner, try serving your T-Bone with:
- Crispy roast potatoes or thick-cut chips

- Peppercorn or mushroom sauce
For something a little more relaxed, add a few sausages to the BBQ, put some sides in the middle of the table and turn it into a family feast.
