1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley for garnish (optional)
How to Make It
Step 1: Preheat the Oven
Preheat your oven to 200°C fan bake (220°C conventional). Line a large roasting tray with baking paper for easier clean-up.
Step 2: Prepare the Lemon Garlic Marinade
In a small bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, oregano, paprika, salt and pepper.
Mix well until everything is combined.
Step 3: Season the Chicken
Pat the chicken thigh cutlets dry with paper towels – this helps the skin become crispy.
Rub the lemon garlic mixture over the chicken, making sure each piece is well coated.
For extra crispy skin, keep the skin facing upwards and avoid leaving too much wet marinade sitting on top.
Step 4: Prepare the Potatoes
Toss the halved baby potatoes with a little olive oil, salt and pepper.
Arrange them on a large roasting tray alongside the chicken, leaving some space between the pieces for even cooking.
Step 5: Roast Until Golden
Place the tray in the oven and roast for 30 minutes.
Remove the tray, turn the potatoes and add the courgette and asparagus, lightly coated in the remaining olive oil.
Return to the oven for another 10–15 minutes, or until the chicken skin is golden and crispy, the potatoes are tender and the chicken reaches an internal temperature of 75°C at its thickest point, away from the bone.
Step 6: Serve & Enjoy!
Allow the chicken to rest for 5 minutes before serving.
Finish with fresh parsley and a squeeze of lemon juice.
Serve everything straight from the roasting tray for a delicious, fuss-free family dinner.
Tips for Perfect Chicken Thigh Cutlets
1. Don't skip drying the chicken. Removing excess moisture helps achieve that delicious crispy skin.
2. Give everything some space. Overcrowding the tray creates steam rather than crispy roasted edges. Use two trays if needed.
3. Keep the bone in! Bone-in thigh cutlets are fantastic for roasting because they're flavourful and stay tender throughout cooking.
4. Switch up your vegetables. Try broccoli, carrots, capsicum or kumara depending on what's in your fridge.
5. Make it your own. Add a drizzle of honey towards the end of cooking for a slightly sweet finish, or sprinkle chilli flakes over the chicken for extra heat.
