Hearty Beef Casserole


800gm Premium Diced beef

1 large white onion

3 carrots diced

3 stalk celery diced

1 bay leaf

2 sprigs fresh rosemary

4 sprigs fresh thyme

2 Tbl tomato paste

4 cloves garlic chopped

2 – 3 cups beef stock

½ cup red wine optional

2-3 Tbl plain flour

Salt and pepper


Coat all the diced beef in flour salt and pepper.

Heat 2Tbl oil in a pan lightly seal and brown the beef.

Do not overcrowd the pan and this is better done in batches remove all beef and set aside.

Add the onion carrot garlic and celery to the pan and lightly brown, return the beef to the pan add the red wine to deglaze the pan.

Add the tomato paste, beef stock and all the herbs to the oven proof pan or dish.

Cook in the oven for 1.5 -2 hour at 175 C until the beef is tender.

 Serve with Mashed potatoes
