The Perfect Sausage
The most important factor is to start with a high quality sausage.

Use the following technique to insure a juicy flavoursome sausage.
- Heat a heavy based fry pan or barbeque to a medium heat.
- Add a drizzle of oil to coat the pan.
- Cook slowly over medium/low heat. Cover with a lid.
- Turn every 2-3 minutes to achieve a golden brown colour.
- Do not pierce the skin of the sausage as this will allow some of the juice and flavour to escape, defeating the purpose of in casing the sausage in an impermeable membrane to hold the juices in.
- Cook for 15-20 minutes or until cooked.
- Test if the sausage is cooked by slicing into a sausage. When cooked the juices should run clear and the meat should not be pink.
Helpful Hints.
Serve sausages with a tomato relish and mustard.
Make a gravy and serve as bangers and mash.
