Winter Warmer: Italiano Style Casserole

Each season has our bodies craving different foods. Winter is a time for hot and hearty meals with plenty of slow-cooked meats and seasonal veggies. Like other animals, it’s possible our body’s evolutionary past kicks into overdrive and inclines us to eat more protein-rich foods to survive the tough winter conditions. Or maybe we just love the taste of perfectly cooked meat, rich gravy, healthy roasted vegetables and the warm, fuzzy feeling these hot meals give us. For that reason, we’ve put down one of our favourite recipes which you can make with the help of our Winter Warmer Box made up of:

  • Fresh NZ Lamb Hind Shank
  • Angus Beef Mince (500gms)
  • Whole Angus Beef Silverside Roast (1kg)
  • 2 packets of Single Chicken Breasts (800gms)
  • 1 Whole Chicken Size 18
  • Angus Beef Sausages (500gms)
  • Shoulder Bacon (1kg)

It seems every man and their dog is travelling to the boot of Italy this winter as the world reopens and the sunshine of Europe calls. Whether you are preparing for an overdue holiday or need to introduce some Mediterranean cuisine into your home, create your own version of our Italiano Casserole with beef, lamb or chicken. Below we’ll use our favoured Silverside beef for this recipe.

INGREDIENTS 

1kg Whole Angus Beef Silverside Roast 

400g chopped tomatoes

400g can cannellini beans

2 tbsp white flour

2 tbsp tomato paste

1 white onion

1 red capsicum

1 cup beef stock

1 tbsp fresh oregano leaves

1 garlic clove

METHOD

  1. Start by slicing your beef into bite-size chunks, seasoned as you wish with salt and pepper.
  2. Fry the beef to brown with extra virgin olive oil on a high heat before transferring it to a slow cooker.
  3. Add sliced onion, capsicum and garlic.
  4. Mix beef stock with tomato paste and flour to create a rich paste for the beef. Add to the cooker.
  5. Add tomatoes and oregano before covering.

Best cooked on low for 6 hours for maximum flavour. Shortly before the end of cooking, drain, rinse and stir in cannellini beans. Buon appetito!
