Easy Malaysia Beef Rendang
A very common Malaysia curry originated from Indonesia, Beef Rendang is prepared with aromatic spices. It is typically a dry curry, but the meat is tender and every piece is coated with the curry sauce! If you have long to try to cook a curry from scratch, this simple recipe will no doubt be the best to start with!
Ingredients
2 packets of 500g diced beef
1 brown onion
1 bulb garlic
1 bulb of shallot
2 inches of ginger
2 inches turmeric or 2 tsp turmeric powder
2 red chilli or 1 tsp chilli powder
2 stalks lemongrass (the white parts only)
1 can coconut milk
½ cup brown sugar
3 tbsp. cooking oil
Salt to taste
Steps
Blend the brown onion, garlic, shallot, ginger, turmeric, chilli and lemongrass into a paste.
Sauté the paste and add the diced beef.
When boiling, add the coconut milk.
Simmer over medium heat until the gravy is half dry. Stir occasionally to prevent burns at the bottom.
Add the brown sugar and salt and simmer until the consistency desired is reached.
Serve with white rice. Bread, or in a wrap.
Tips
This recipe can be cooked in a crockpot or pressure cooker.
Chilli can be omitted without altering the flavour of this dish. For a more flavorful dish, dried spices such as cardamom, star anise, cinnamon sticks (or powders) can be added slightly if available.
