Had this last night and it was fantastic. The crackling was tops and the meat beautiful and juicy. To make it crackle all ways rub the top with oil then rub in salt then finish by rubbing fennel seeds into it. I also always crackle it before roasting the meat. Never had a miss. It was so good thanks
