3 tablespoons olive oil

2-3 tablespoons crushed red pepper flakes (adjust to your spice preference)

1.5 teaspoons smoked paprika

1.5 teaspoons dried oregano

1.5 teaspoons salt

1 teaspoon black pepper

4-5 cloves of minced garlic

Steps

Prepare the Marinade

Our butterfly chicken already has a beautiful lemon and herb glaze, all that needs adding is that devilish spice. In a small bowl, combine the olive oil, crushed red pepper flakes, smoked paprika, dried oregano, minced garlic, salt and pepper. Mix well until all the ingredients are combined. Adjust the amount of crushed red pepper flakes based on your heat tolerance. If you prefer it milder, reduce the amount.

Marinate the Chicken

Place the butterflied chicken in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it's well-coated. Seal the bag or cover the dish, and refrigerate for at least 2-4 hours. The larger chicken will require a longer marinating time to infuse the flavours.

Preheat the Grill

Preheat your grill to medium-high heat. Ensure it's well-oiled to prevent sticking.

Grill the Chicken

Take the chicken out of the marinade, letting any excess drip off. Place it on the hot grill and grill for about 20-30 minutes per side, or until the chicken reaches an internal temperature of 165°F (74°C). Make sure the chicken is cooked through and that the skin is crispy and golden brown.

Remove the chicken from the grill and let it rest for 5 minutes.
