Sweet and Sour Chicken
Amaze your family and skip the take out – this Sweet and Sour Chicken Recipe is so good that you’ll put it on your meal’s plan every week! One of our team members, Mona, created this recipe for the family and it is surely healthier and homelier!
- 500gm Chicken thigh skinless boneless, diced
- 1 Brown onion, cubed
- ½ cucumber, cubed
- 1 can of diced pineapple or 1/3 of fresh pineapple, cubed
- 1 cup of corn starch
- 1 egg, beaten
- 1 cup of tomato ketchup
- ½ cup of water
- 3 tbsp. of white vinegar
- 2 tbsp. of sugar
Combine the chicken with the egg mixture and then coat with the corn starch. Pat off extra starch and set aside.
Whisk together the vinegar, water, sugar and tomato ketchup. Set aside.
Shallow-fry the chicken pieces in batches, or put them into the air fryer/ oven until cooked (approximately 15 minutes). Set aside to cool slightly.
Stir fry the onion, cucumber and pineapple in a little bit of oil for 3 minutes. Then, pour the sauce mixture in. When the sauce is simmering, add the chicken pieces back in and cook until the sauce has thickened to your liking.
Serve hot with steamed rice.
