Easy Beef Casserole

This is a super-easy recipe from a friend and it has been passed down by the elderly to her and she generously shared it with everyone because good food is worth spreading around! It is simple, aromatic, beefy, and the ingredients are so common you will have it at home! It is worth trying especially you need to make up something quick for the unexpected crowd in this wintry day!

Ingredients
1 kg Beef Rump, largely diced
1 brown onion, chopped
3 carrots, chunkily chopped
3 potatoes, chunkily chopped
2 can of diced tomatoes
1 tsp of mixed herbs
2 tbsp. of oil
Salt and pepper to taste

Steps
In a pot, heat 2 tbsp. of oil, stir fry the onion until aromatic, then add in the beef. Stir fry for 3 minutes.
Add carrots and potatoes, cook for 5 minutes before adding in the diced tomato and bring to the boil.
Turn the flame to low, and cook for 1 hour, stir occasionally.
Add salt and pepper to taste before turning off the flame.
Serve with rice, bread or even on its own!

Tips
This recipe can be prepared in a crockpot, slow cooker, casserole or in the oven!
Fresh herbs such as rosemary, basil, and thyme can be added for extra flavor.
